      Sesame Broccoli


      Here is a quick and easy veggie side dish to make
      1 lb of broccoli, cut into spears or use a package of frozen broccoli spears, chopped broccoli doesn’t work so well I have found.
      2 tablespoons of butter or margarine, I have only used butter.
      1 to 2 tablespoons of sesame seeds depending on your taste.
      2 tablespoons of diced pimiento 1 tablespoon lemon juice dash of pepper

      In a sauce pan bring 1 cup of lightly salted water to a boil. Add broccoli. Let water boil again, reduce heat. Cook, covered, for about 10 minutes or until broccoli is tender, if you are using frozen broccoli following cooking direction on package. Drain broccoli, return broccoli to pan.

      In a small frying pan melt butter, add sesame seeds, sauté and stir seeds until they turn golden brown, be careful not to let the sesame seeds brown too much. Remove from heat, add pimentos, lemon juice, and pepper. Pour sesame mixture over broccoli, stir mixture to coat. Put into a serving bowl and enjoy!

      YAHNG’S FRIED RICE

      Are you tired of potatoes and pasta? How about serving rice tonight?
      This is a great hit with my family the kids really love it!!!

      3 cups of long grain rice cooked (CHILL)
      4 ounces of frozen/fresh shelled shrimp or canned shrimp (I never add the shrimp, as there are a few finicky eaters at my house)
      4-6 ounces of cooked ham or roast pork (I don’t add these ingredients unless we have it left over from a previous meal)
      2 to 3 leaves of romaine lettuce
      1 bunch of scallions chopped coarsely (Optional)
      2 tablespoons of cooking oil. (I recommend any brand of canola oil)
      2 beaten eggs
      1 cup of frozen peas
      2 tablespoons of chicken broth or soy sauce I add both. (equal parts)

      Cook rice and chill for about 90 minutes if you are adding shrimp to your recipe cook fresh or frozen fish in 3cups of water add 1/2 tsp. of salt (make sure water is boiling before adding shrimp) return to boiling, reduce heat and let cook uncovered about 4 minutes. stirring occasionally. Rinse and drain shrimp. chop shrimp coarsely. Note if you are using canned shrimp add it at the very end just before you dish is ready to serve.

      Dice ham and or pork if you are adding these to recipe.

      Pre-heat a wok or large frying pan over medium heat add 1tablespoon of the oil. Add eggs; lift and tilt wok or pan to make a thin egg sheet, it will look like an omelet before its folded. cook egg without stirring, about 3 minutes. slide egg sheet onto cutting board. slice into strips.

      Return wok or pan to high heat, add remaining oil to the hot wok. You may need to add more oil as ingredients cook to avoiding sticking and scorching. Stir fry shrimp and pork ingredients if you are using them in your recipe. Stir fry peas and scallions in hot oil for about 2 minutes. Add rice, chicken broth and soy sauce. stir until heated through. Stir in egg strips. cover and cook for 2 minutes, add romaine, toss lightly. Mange!!!

      Chicken Cacciatore


      This is a quick and easy dish, not to mention its tasty!!

      THE INGREDIENTS YOU WILL NEED:
      Boneless chicken breast, cleaned and cubed. About 1-2lbs or more depending how many people you are feeding.
      You then pan fry chicken breasts on medium heat {add a little bit of olive oil to pan so chicken doesn't stick} until thoroughly cooked.
      You will also need green or red peppers, or both, you can also add fresh broccoli, and carrots, mushroom, and onions. You can decide on the desire amount. I usually just use the peppers, mushrooms, and onions, occasionally I will add the broccoli and carrots. Cut them into desired pieces, bite size is best.

      Pan fry veggies in a little bit of olive oil and don't forget to salt veggies, it gives them a better taste.

      After you have cooked the chicken and vegetables, you can either use jar spaghetti sauce, or you own homemade. Mix the vegetables in spaghetti sauce heat sauce and veggies on stove, until bubbly.

      Then in a large casserole dish, layer the chicken and pour sauce over top. Bake at 350 for about 1/2 hour. You can sprinkle mozzarella cheese over the top if you would like, around the last five minutes otherwise the cheese gets too brown.

      Serve with pasta, and a green salad.

      Swedish Apple Pie


      Fill a pie pan 2/3 full of peeled, sliced apples. Sprinkle with 1 tablespoon sugar and 1 teaspoon cinnamon.

      In a small bowl, combine 2/3 cup melted butter, 1 cup sugar, 1 cup flour, 1 egg, a pinch of salt, and 1/2 cup chopped nuts.

      Pour over the apples.

      Bake at 350 degrees for about 45 minutes - until golden brown.

      Banana Nut Bread


      2 eggs
      3 medium ripe bananas
      2/3 cup sugar
      1/3 cup salad oil
      1 3/4 cups sifted flour
      2 tsp baking powder
      1/4 tsp baking soda
      1/2 tsp salt
      1/2 cup nuts

      Mash bananas, add eggs, sugar and salad oil. Mix together. Add dry ingredients and mix.

      Bake at 350 for about 55-60 minutes.

      Chocolate Cookies


      1 package chocolate chips - 6 oz
      1 can sweetened condensed milk
      1 tsp vanilla
      2 cups graham cracker crumbs
      1/2 cup nuts.

      Melt chocolate chips in double boiler. Add sweetened condensed milk and vanilla.

      Pour over the graham cracker crumbs and nuts. Mix. Drop on cookie sheet.

      Bake at 350 degrees for 8-10 minutes. (Since you can’t find 6 oz packages anymore, I usually double this recipe and use the 12oz package.)

      Sour Cream Pound Cake


      3 cups cake flour
      1 cup butter
      3 cups sugar
      6 eggs
      1 cup (1/2 pint) sour cream
      1/4 tsp baking soda
      1 tsp vanilla

      Mix sugar, eggs, butter. Beat until light and fluffy. Add other ingredients. Mix well.

      Bake at 300 degrees for about an hour, until golden brown.

      Easy Chicken Pot Pie


      1 2/3 cups frozen mixed vegetables, thawed
      1 cup cup-up cooked chicken
      1 can condensed cream of chicken soup
      1 cup bisquick Original baking mix
      1/2 cup milk
      1 egg.

      Heat oven to 400 degrees. Mix vegetables, chicken and soup in ungreased 9” pie plate.

      Stir remaining ingredients with fork until blended. Pour into pie plate.

      Bake 30 minutes or until golden brown. (or do what I do. Just use a can of chicken, and a Pillsbury already prepared pie crust and put that on top)

      Winter Carnival Casserole


      2 tablespoons corn oil
      1/2 cup finely chopped onions
      1/2 cup finely chopped green peppers
      1 pound ground beef
      1 12 oz can stewed tomatoes
      1/2 cup Karo syrup
      1/2 tsp salt
      1/2 tsp chili powder
      1/4 tsp pepper
      1 bay leaf
      2 tablespoons corn starch
      3 cups cooked macaroni
      1 cup shredded cheddar cheese

      Heat 2 tablespoons corn oil in skillet. Add 1/2 cup finely chopped onion and green pepper. Cook until tender. Add 1 pound of ground beef, brown, stirring often. Pour out and save 1/2 cup liquid from a 12 oz can of stewed tomatoes.

      Add the remainder of tomatoes to the ground beef mixture. Add 1/2 cup Karo syrup, 1/2 tsp salt, 1/2 tsp chili powder, 1/4 tsp pepper, and a bay leaf to ground beef mixture.

      Bring to a boil and simmer for 15 minutes. Blend 2 tablespoons corn starch with the 1/2 cup tomato liquid, stir into the meat mixture. Bring to a boil, stirring.

      Add 3 cups cooked macaroni. Pour into a 2 quart casserole dish. Sprinkle with 1 cup shredded cheddar cheese. Bake at 350 degrees for about 30 minutes.
