REFRIGERATOR BROWNIES

1/2 cup shortening
1 beaten egg
1 cup sugar
1/2 cup chopped nuts
6 double graham wafers, crumbled (1 cup)
3 tbsp. cocoa
1 tsp. vanilla
graham wafers, whole

  1. Heat shortening, sugar, egg, and cocoa in pan. Boil 1 minute, stirring constantly. Remove from heat and add crumbs, vanilla, and nuts.
  2. Line an 8"x8" pan with whole graham wafers. Spread mixture on wafers. Chill. When brownie is set, frost with chocolate frosting.


CHEESE BALL

8 oz. cream cheese, softened
1/4 cup mayonnaise
2-8 oz. tins flaked ham
2 tbsp. parsley
1 tsp. onion, minced
1/4 tsp. dry mustard
1/4 tsp. tabasco sauce
1/2 cup chopped walnuts

  1. Whip the cream cheese and mayonnaise.
  2. Stir in all the remaining ingredients except walnuts. Roll into 2 medium sized balls.
  3. Roll each ball in chopped walnuts. Chill until firm. Serve with crackers or bread sticks. These can be frozen.


APPLE CIDER

5 cups apple juice
1 cup orange juice
4 whole cloves
2 cinnamon sticks
1/2 tsp. allspice
1/2 tsp. nutmeg

  1. Simmer all ingredients 15 minutes, serve hot.


CABBAGE BORSCHT

1 pound meat or sausage in small pieces
1 medium head cabbage, chopped
5 medium potatoes, peeled and diced
2 large onions, diced
3 medium carrots, peeled and sliced
2 bay leaves
allspice
pepper
salt
1 tin tomato paste

  1. Brown meat in small amount of oil in large pot. Add vegetables and cover with water.
  2. Add tomato paste, stir well, add bay leaves. Simmer uncovered for 1/2 hour.
  3. Add seasonings to taste. Cook covered for 2 hours or until vegetables are tender. Remove bay leaves before serving.
When serving have a dish of sour cream available, add dollops to each serving to taste.


CINNAMON PORK
2 pounds pork tenderloin
4 tbsp. sugar
1/4 tsp. salt
4 tbsp. soya sauce
1 1/2 tsp. cinnamon
2 tbsp.sherry
1 tsp. ginger
2 tsp. dry mustard
2 tsp. lemon juice

  1. Place pork in baking dish.
  2. In a bowl, mix the remaining ingredients. Stir well. Pour over the pork.
  3. Bake at 325F for 1 hour, baste frequently.
