KING RANCH CHICKEN
3-4 lbs. chicken (boiled,deboned),8oz.pkg.corn tortillas,1- bell pepper,(chopped), 1 -lg. onion,(chopped),1 can cream of mushroom soup, 1 can cr. of chicken soup,1 can Rotel tomatoes-diced. Garlic salt to taste. l&l/2-2 tsp.chili powder.l2 oz. shredded cheddar cheese. Broth from chicken.--Cut up chicken,mix with bell pepper and onion. Sprinkle with chili powder and garlic salt.Layer alternately with tortillas that have been dipped in hot broth.Top with cheese. Mix soups & tomatoes together,pour on top. Bake in large casserole dish (covered) at 350 for 30-45 min. I also add about 1/2 cup of the broth into the soup mixture to make a much moister casserole.
EARTHQUAKE CAKE
1 cup coconut, 1 cup pecans (chopped),1 box German Chocolate cake mix, 8oz package cream cheese, 1-lb.package powdered sugar,l stick butter or margarine melted.---Grease and flour 8x14 pan. Spread coconut and pecans on bottom. Mix cake mix according to package directions.Pour cake batter over the pecans and coconut. Melt butter and add cream cheese and stir until softened well. Add powdered sugar and mix well. Spread over cake. Bake at 350 degrees for 45 minutes until done.This is a very easy cake especially for people who love german chocolate cake.It's soooooGood!
MONKEY BREAD
1 cup milk scalded, Add 1 cup water,2 Tbls.butter or l/3 cup Crisco-(Melt in milk mixture).Add 2 pkgs. of yeast to the lukewarm milk mixture.Beat 2 eggs,add 2/3 cup of sugar,l tsp. of salt. Then stir in eggs,sugar, and salt. Add 4 cups of flour and mix well. Let dough rise in large greased bowl for about an hour. Roll out dough using one cup of flour. Work into mixture well Roll out, cut into strips,dip strips in 1 stick melted butter. Place each strip into a greased bunt pan and let rise again.Cook at 350 degrees for about 25 minutes or until light brown.This should come out of the pan easily and is like pull-apart bread but much tastier!
MY FAVORITE TEXAS CHILI
2 lbs. ground round or chuck, 1 lg. chopped onion, 2 cans diced tomatoes,3 sm. cans of tomato sauce, garlic powder to taste, 2 teas. chili powder, 1 tsp. salt, black pepper as desired, 2 cans Ranch Style chili beans, 2 cups water. Brown hamburger and onion, add garlic. Add seasonings, tomatoes,and sauce,beans and water. Bring to boil,cover and then simmer for about an hour. Stir occasionally.( Add sm. amts.water as needed to desired consistency).
QUICK,EASY,FUDGE!
1 lg.bag milk chocolate chips, 1 lg. bag semi-sweet chocolate chips, 1 can low fat, sweetened condensed milk, 1 tsp.vanilla,nuts as desired or about 3/4 cup chopped pecans. Melt chips in saucepan with condensed milk over low heat,stir until all chips are melted. Add vanilla and nuts. Pour mixture into 8x8 buttered pan. Place in refrigerator to set.This has never failed me yet, and it is never sugary.
SMOTHERED STEAK
1 1/2 to 2lbs. of round stead cut into medium size portions. Flour each piece and brown in skillet with small amt. of oil. I use a lg. cast iron deep skillet for browning the meat and cooking in as well. Place the browned meat skillet,add 1 lg. sliced onion, salt and pepper to taste, then cover meat with water. Place in oven at 350 degrees and turn meat about every 30 minutes, until meat has cooked for about 2 hours. This will be a very tender, great tasting meat. Be sure you do not let the steak become dry in the oven. Add more water if necessary. Also add about 2 tbls. flour to your first water mixture as this will make it's own gravy.
GLENDA'S PECAN PIE
3 eggs slightly beaten, 1/2 cup firmly packed brown sugar, l/4 cup white sugar,1 c.white Karo syrup, l 1/2 c. chopped pecans, l/4 cup melted butter or margarine, 1 tsp. vanilla flavoring. Combine ingredients and pour into unbaked pie shell. Do not use electric mixer to beat ingredients. Stir with wire wisk just to be sure eggs are beaten well. Bake in 325 degree oven for 45-55 min.
PERFECT PIE CRUST
4 cups flour, 1 Tbsp. sugar, 1 tsp. salt, 1 3/4 c. Crisco, l/2 c. water, 1 Tbsp. white vinegar, l large egg. In large bowl, mix well with fork, the flour, sugar and salt. Add shortening; mix with fork until crumbly. In small bowl beat egg,add water and vinegar. Add this to the flour mixture and stir until all moistened. Chill dough for about 30 min. Separate dough into 4 separate balls, as this will make four large crusts. Place each unused crust into freezer bag and this will keep in freezer until you need another crust. Just remove from freezer and let thaw at room temperature.( Do not use Lard,margarine,butter or oil).
