Hog killin' day used to be a big event in the lives of Tyrrell County folks. It was not just a day of hard work but a social event that brought family, neighbor, and friend together to share the chores. A hog killin' provided many good things to eat such as fresh pork, pork to salt, lard, and sausage. One of my favorites is the byproduct of trying lard in the old cast iron wash pot. The chunks of skin and meat left after the fat has been removed can be eaten as they are or ground for making biscuits or cornbread.
